My flight’s stopover will be in the Dubai International Airport where in I have to wait there for 4 hours. Which is why I need to know what type of currency is accepted in the airport.

(these currencies will also be acceptable in a number of Dubai shops not only the airport) However if you wish to only get a meal or anything from duty free you are able to just use your credit card , you don’t have to carry change.
